4-day course, baking day - 4-päiväinen kurssi, leipomispäivä


Last day of the course was baking day. I can't remember what we had for a morning snack, I haven't documented it. First we made a sweet pastry as Matt told us we'll be baking frangipane tarts later. The ingredients were measured for us. I haven't seen light green/pale blue eggs before. Had to choose the plate with greenest egg.

Kurssin viimeinen päivä oli leipomispäivä. En muista mitä saimme aamupalaksi, en ole näköjään dokumentoinut sitä. Ensin teimme makean piiraspohjan, koska Matt kertoi meidän leipovan mantelileivoksia myöhemmin. En ole nähnyt aiemmin vaalean vihreitä/sinisiä munia. Täytyi ottaa joukosta kaikkein vihreimmän munan sisältävä lautanen. 

We had started the sourdough bread day before and it had been proving in fridge. The bowl was taken out onto the table. River Cottage 13 years old rye starter was used and spelt flour for the bread. Also another bread dough was started. I used as a liquid the whey I had stored in fridge since making labned on the veg day. Rest was water as guided. We used both wheat and rye for this bread and fast acting dry yeast. 

Olimme laittaneet hapanjuurileivän alulle jo edellisenä päivänä ja se oli ollut hiljalleen nousemassa jääkaapissa yön yli. Tämä kulho nostettiin pois jääkaapista pöydälle. Leipään käytettiin River Cottagen 13-vuotiasta ruisjuurta ja jauhoina käytimme spelttiä. Alustimme myös hiivaleipätaikinan, tähän käytin kasvispäivänä tehdystä labnehista jääneen heran, jonka oli jättänyt odottamaan käyttöä jääkaappiin. Tähän leipään käytimme vehnää ja ruista. 

As a snack at some point we got pig's ears. They had been cooked in River Cottage kitchen for us. I promised not to tell this to my dog, eating her treats. Well, she wouldn't get them salted. Also black pudding was served as a snack.

Jossain välissä saimme välipalaksi possun korvia. Ne oli kokattu meille River Cottagen keittiössä. Lupasin, etten kerro tästä koiralleni, minähän söin sen herkkuja. No, ei se saisi niitä suolattuina. Saimme myös maistaa verivanukasta.

The baking day was first when I felt being hungry. We hadn't cooked any lunch yet. Luckily we got lovely courgette soup to keep us going. 

Leivontapäivä oli ensimmäinen, jolloin tunsin olevani nälkäinen. Emme olleet tehneet lounasta itsellemme. Onneksi keittiöstä tuotiin kupilliset ihanaa kesäkurpitsakeittoa.

I was taken by total surprise as Matt said we'll make blinis for lunch! In August and in England. Unbelievable. In River Cottage they use mix of rye and wheat flour, not buckwheat. Charlotte told me that blinis are very popular, served at parties. We left the batter to bubble while we were working with both breads. They brought us red cabbage sauerkraut for the blinis. Decorated with calendulas and cornflowers. We made sour cream ourselves for the blinis and lemon sole fillets had been smoked for us. Topped with fennel, not dill. 


Minä yllätyin täysin, kun Matt sanoi, että teemme blinejä lounaaksi! Elokuussa ja Englannissa. Uskomatonta. River Cottagessa käytetään blineihin vehnä- ja ruisjauhojen sekoitusta, ei tattarijauhoja. Charlotte kertoi, että blinit ovat hyvin suosittuja, niitä tarjoillaan pieninä alkupaloina juhlissa. Jätimme taikinan kuplimaan, kun työstimme leipiä. Meille tuotiin keittiöstä punakaalista tehtyä hapankaalia blineille. Se oli koristeltu kehäkukan ja ruiskaunokin kukilla. Teimme myös hapankerman itse, sitä kun ei taida saada suoraan kaupan hyllystä kuten meillä Suomessa. Pikkupääkampelafileet oli kylmäsavustettu suolauksen jälkeen. Päälle fenkolia, ei tilliä. 

Next it was time to roll sweet pastry and make frangipane filling for tarts. I managed to make nine tarts from the filling. Charlotte gave me halved one of her tarts and gave to me to taste so I was able to take my tarts back home.

Seuraavaksi oli aika kaulita piirastaikina ja tehdä mantelitäyte tortuille. Sain täytteen riittämään yhdeksään torttuun. Charlotte leikkasi yhden tortun kahtia ja antoi minulle maistiaisen, joten toin kaikki paistamani tortut kotiin. 

The breads needed to go in the oven. The sourdough bread was baked in "Dutch oven" in a pot that is. Big ovens behind teacher's table fit them all in. Other breads were baked in our ovens. I had put mine into the basket to prove and flipped mine onto the hot baking tray. Once they they baked, Matt cut his breads for us to taste and it was served with rillette made on meat day. 

Leivät laitettiin uuniin. Hapanjuurileivät p. aistettiin padassa (hollantilainen uuni, sanoivat he siellä). Isot uunit opettajan pöydän takana riittivät padoillemme. Hiivaleivät paistoimme omissa uuneissa. Olin nostattanut myös hiivaleivän korissa, joten kippasin sen kuumalle pellille paistumaan. Kun ne oli paistettu, Matt leikkasi leipänsä meille maistiaisiksi. Leivän kera tarjolla oli rilletteä, joka tehtiin lihapäivänä. 

At the end of the day we packed our goodies. Both breads, some River Cottage sourdough starter, smoked lemon sole fillet, cured mackerel fillet, frangipane tarts and piece of black pudding. We got a book of our choice, I picked 'Love your leftovers' to take home to. Time to say thank you and goodbye to Matt and Vicky and to the tractor we went for last time. Up at the car park it was time to say goodbye to others. Unforgettable four days had passed. I was happy and tired. 

Päivän päätteeksi pakkasimme herkkuja mukaan. Molemmat leivät, River Cottagen hapanjuurta, kylmäsavustettu kampelafilee, suolattu makrillifilee, mantelitortut ja pala verivanukasta. Saimme valita kirjan, minä päädyin "Love your leftovers" -kirjaan, joka oli ilmestynyt viime vuonna. Oli aika sanoa kiitokset Mattille ja Vickylle ja kävelimme traktorin kyytiin viimeistä kertaa. Kyyti ylös parkkipaikalle ja hyvästit muille kurssilaisille. Unohtumattomat neljä päivää oli ohi. Olin onnellinen ja väsynyt.
